Mary Alden was the corporate face of Quaker Oats, in an era when every food company had its own bland, non-threatening mascot like Betty Crocker. Quaker recognized that many Americans were allergic to wheat and published this pamphlet as a response. The US government also recommended this pamphlet for people with wheat allergies.
